The North Sea shrimp or gray shrimp (Crangon crangon) is the best known shrimp species in the Netherlands and Belgium. The length is approximately 50 to 70, maximum 90 millimeters and the color is gray to brown with an irregular speckled pattern. The shrimp can change color to adapt to the substrate and is then almost invisible.
The North Sea shrimp is common in coastal waters with a sandy to silty surface. The shrimp forages on the bottom at night and burrows during the day so that only the eyes and antennae stick out.
Shrimps are now often cooked on board to be peeled ashore. This peeling is usually done by hand by shrimp peelers in low-wage countries such as Morocco, Thailand or Bangladesh.
